Jivitputrika or jitiya Jivitputrika or jitiya is a festival celebrated for the well being and prosperity of the children. Mothers fast and pray for the long life of their kids. This is mainly celebrated in the states of Bihar, Jharkhand & Uttar Pradesh. When and how to celebrate Jivitputrika/ jitiya This is a 3 days festival and starts from seventh lunar day of Krishna-Paksha in Ashvin month to ninth lunar day. Nahai khai – This is the preparatory day and as per the rituals – Mothers take bath in the morning and take food. There seems to be lots of dishes with YAKHNI in them. Sometimes some of us get confused and wonder what actually this Yakhni is ?
What is the meaning of this Yakhni?

Let’s try to understand – YAKHNI
1.  Yakhni literally means a stock
Yakhni is made by simmering  bones (Mostly Mutton bones but can also be prepared using Chicken bones), with spices and vegetables. It is used as a base for preparation of various dishes – Yakhni Shorba,Yakhni Pulao, Yakhni Mutton etc.

       2. Yakhni also denotes various preparations (veg or non veg) that has a base of Curd. This is flavoured with fennel powder (sauf) and dry ginger powder (Sauth), may also contain saffron. – Yakhni Mutton, Nadru Yakhni, Mushroom Yakhni etc. 


Yakhni Shorba
Ingredients:
Mutton  – 500 gms,
Water – 1 lit
Salt – 1 tsp
Beaten curd – 2 cups
Saffron – 1/4 tsp

For spice potli 
Muslin Cloth – 1
Ginger – 2 '' , finely chopped
Fennel seeds – 2 tbsp
Clove - 6
Black cardamom – 4, cracked open
Peppercorn – 12
Bay leaf – 2
Cinnamon stick – 2"
Cumin seeds – 1 tsp
Coriander seeds – 2 tsp

How to make yakhni shorba
Take the muslim cloth and keep all the spice in the center. Collect the edges and tie it with a string. .
Take the mutton, water, salt and spice potli in a vessel/pressure cooker.
Cook till  7 - 8 whistle.
Remove meat and potli and set aside.
Add beaten curds and saffron and cook for 5 minutes.
Cut the mutton pieces. Portion the shorba in bowls and garnish with mutton pieces.

Yakhni
Lamb cooked in Curd

Lamb (from breast and shoulder, with bones)            1 kg
Ghee/refined oil                                                          100 ml
Green Cardamom                                                        4
Black Cardamom                                                        2
Cloves                                                                         4
Cinnamon Sticks                                                         1’’
Bay leaf                                                                       2
Black cumin                                                                a pinch
Fennel Powder                                                            2 tsp
Dry Ginger Powder                                                    ½ tsp
Curd                                                                            750 gm
Rice Flour                                                                   1 tsp
Salt                                                                              to taste

How to make yakhni
Heat the  oil in a pressure cooker, add cinnamon stick, green cardamom, black cardamom, bay leaf, cloves and let them crackle . Now add the mutton pieces and sauté for 15 minutes. 
Add   2 glass water, saunf powder; dry ginger powder and pressure cook it up to 3 whistles.
Separate the stock from the mutton. Whisk the curd in a bowl and add this to the stock. Now cook till it starts boiling. Add the cooked meat and continue cooking till gravy thickens.
Dissolve the rice flour in 1 tsp water and mix it to the gravy.

Serve it with hot white boiled rice.
