The literal meaning of Muzaffar is Victorious.
In kitchen muzaffar signifies a sweet dish. There are few popular varieties of muzaffar - Muzzafar that means rice muzzafar (rice and milk Pudding), Seviyon ka muzzafar (fried vermicelli cooked in sugar syrup) and Annanas ka Muzzafar (rice cooked with pineapple)
Annanas ka Muzaffar
Pineapple - 300 gm, diced
Rice - 250 gm, Washed and Soaked
Sugar - 250 gm
Green Cardamom - 2 gm
Clove - 1 gm
Saffron - 1 gm, dissolved in 1 tbsp water
Ghee - 50 gm
Khoya - 50 gm
Cashew - sliced and sauteed in ghee
Almond - sliced and sauteed in ghee
Water - as required
How to make Annanas ka Muzaffar
Boil some water in a heavy bottom pan. Add the green cardamom, clove and saffron.
Now add the soaked rice to this water and cook till half cooked. Strain and in a different pan heat the pineapple dices, sugar and 1 cup of water.
Now add the half cooked rice, mixed it and allow to cook on dum for 10 - 15 minutes.
open this and add the ghee and khoya. Mix it, portion this, garnish this with sliced cashew and almonds and Enjoy.
