kadhai gravy - restaurant style gravy/ kadhai Paneer/ Kadhai Chicken

Kadhai gravy is very popular gravy from Punjab. This is also regarded as a derivative of Makhni (tomato) gravy and used to make various dishes like Kadhai paneer/ kadhai murg (kadhai chicken) etc.
This is popularly called as Kadhai paneer gravy or dhaba gravy. 

Kadhai gravy = chopped/sliced/diced onions, tomatoes, capsicum + Pounded Masala (Cumin seeds, Coriander seeds, whole red chillies, Black Peppercorn) + Makhni Gravy

Tomatoes  2 no
Onions 2 no
Capsicum 1no
Ghee  5 gms

Coriander seeds 15 gms
Whole red chilies 10 No
Cumin seeds             5 gm
Peppercorn               3 gm

Green coriander        5 gm
Green chilies  4 No
Ginger                 45 gms
Kasoori methi         5 gms                
Garam Masala 5 gms
Butter                      10 gm
Cream                      10 gm

How to make  Kadhai gravy
Dry roast and pound the coriander seeds, cuminseeds, peppercorn & whole red chilies.
Remove steam, wash, slit, deseed & chop green chilies. Chop the green coriander. Scrap wash & julienne the ginger.
Chop  the tomatoes, capsicum and onions.

Heat ghee in a kadhai; add the chopped onion, tomato and capsicum  sauté for over medium heat until for 2 minutes. Add the pounded spices, sauté for 30 sec. Add makhni gravy & cook until the fat comes to the surface. Now add kasoori methi powder, garam masala powder, butter and cream & stir. Sprinkle chopped green coriander and ginger juliennes.

Easy kadhai paneer recipe -

Add 250 gm to 300 gm paneer in the above mentioned kadhai gravy.

How to make kadhai murg/ kadhai chicken/ chicken kadhai

Easy kadhai murg recipe -

Add half tandoori chicken (cut into smaller pieces) in the kadhai gravy.
