what is badin jaan?
Amazing brinjal preparation from awadhi cuisine. I am sure people of bengal would start relating this with begun bhaja.... but this is different - completely different - a master piece from Aw adhi kitchen.
Brinjals - 500 gm, cut into thick slices
Red chili powder - 1 1/2 tsp
Turmeric powder - 1 tsp
Ginger garlic paste - 1 tbsp
Salt - to taste
Lemon Juice - 10 ml
Refined oil - 2 tsp and for frying
Onion - 150 gms, finelychopped
Garlic - 60 gm, chopped
Tomatoes - 500 gm chopped, blanched
Tomato Puree - 100 ml
Hung Curd - 75 gms
Green Coriander - for garnish
How to make Badin Jaan
Wash and Slice the brinjals, Prick them a little and marinate them with red chili powder, turmeric powder, ginger-garlic paste, salt and lemon juice. Heat a pan and shallow fry them.
Heat some desi ghee in a pan, add chopped onion, chopped garlic and cook for 2 minutes, now add tomato puree, and freshly chopped blanched tomatoes.
Spoon this tomato mixture over fried Brinjals and top it with hung curd and finely chopped coriander.
Transfer onto a platter & serve.
