Types of Stock
a) White Stock
b) Brown Stock 

White Stock - 

This is a types of Stock, that is prepared using raw ingredients directly.


Steps of Making White Stock
1- Clean and wash the bones
2- Cut it into smaller Pieces
3- Cover it with cold water and gradually heat it. Drain this water as it has the coagulated bood, fat or other impurities
4- Refill the stock pot with fresh water add the white mirepoix and bouquet garni
5- Bring it to boil then simmer the stock for required period of time. 


Brown Stock- 

This is the type of stock, that is prepared by using roasted or caramelised (browned) bones and vegetables. 

Steps of Making Brown Stock
1- Clean and wash the bones
2- Cut it into smaller Pieces
3- Brown the bones and vegetables (mirepoix)
3- Cover it with cold water and gradually heat it. Drain this water as it has the coagulated bood, fat or other impurities
4- Refill the stock pot with fresh water and bouquet garni
5- Bring it to boil then simmer the stock for required period of time. 



* white mirepoix - replace the onions with leek
