Bhuna maans (mutton Curry) is the most popular mutton preparation of Bihar. It is made by sauting onions and mutton cubes together that is delicately spiced with freshly crushed spices & herbs. This preparation is more popular by the name of Meat and enjoyed best with steamed rice.





Ingredients                                                           Quantity
Mutton                                                                  800 kg
Onion                                                                    600 gm
Green coriander                                                   25 gm
Garlic                                                                     25 gm
Ginger                                                                    20 gm
Cumin Seeds                                                        2 tsp
Black Peppercorn                                                1 tsp
Whole red chillies                                                 2 no
Cardamom                                                           5 no
Cinnamon Sticks                                                 4 inches
Bay leaf                                                                2 no
Turmeric powder                                                 1  tsp
Coriander Powder                                                2 tsp
Red chilli powder                                                 1 tsp
Garam masala powder                                       1 tsp
Mustard oil/Refined oil                                      150 ml
Salt                                                                         To taste

Pre Preparation
Cut mutton into medium pieces, wash them thoroughly and keep a side.
Finely slice the onions and chop the coriander leaves.
Make a paste of ginger, garlic, cumin seeds, black peppercorn and whole red chillies.
Preparation                                                                                
Heat oil in a Kadhai, then add the whole spices (cumin seeds, cardamom, bay leaf, cinnamon sticks). Let them crackle, now add the sliced onions and stir fry for a couple a minute.
Add the pieces of mutton, stir well and add salt, now cover and cook for around 20 minutes.
Now add the paste of ginger, garlic & spices and continue cooking till the onions are mashed. Add the powder spices (Turmeric, Red chilli & Coriander) and cook till it starts leaving oil.
Add some water, cover and cook till it is soft and tender. Finish it with garam masala powder and chopped green coriander.
Serving Technique
Mutton goes well with steamed rice and/or plan roti, accompany with onion slices, lemon wedges and papad. On some special occasions Mutton is also served with pua.
