Salan is a gravy preparation made with  the addition of curd/ tamarind, sesme seeds and nuts.

It is generally yellow in colour, and most of the salans have turmeric and curry leaves in it.

Mirchi ka salan, machli ka salan, baigan ka salan are common varieties.
